Meet our meats

Al Pastor

Trompo Magic

Inspired by Lebanese shawarma, this Mexican classic features pork stacked on a vertical spit (trompo), slow-roasted with achiote and pineapple. Shaved crispy-thin and piled onto tortillas, each bite is sweet, spicy, and utterly addictive.

The Heartbeat of Mexico CityAs dusk falls in the capital, the glow of trompo fires lights up every corner. Taqueros shave crispy-edged pastor onto tortillas with rhythmic precision—a symphony of sizzling pork, achiote, and pineapple that fuels the city’s nightlife. This is street food at its most hypnotic, where every vertical spit spins a story of Lebanese-Mexican fusion.

Birria

Liquid Gold

Goat or beef slow-stewed for hours in a rich consommé of guajillo chiles, cumin, and cloves. Served with crispy-edged tortillas dipped in the broth—a messy, soul-warming ritual from Jalisco, now a global obsession.

Section image
From Jalisco to Every CornerIn the misty mornings of Guadalajara, the scent of slow-stewed birria drifts through mercado stalls. What began as Jalisco's Sunday ritual—goat simmered in clay pots with guajillo chiles and cumin—conquered Mexico with its rich consommé and fall-off-the-bone tenderness. Today, our recipe honors those roots while embracing modern twists like crispy quesabirria tacos that went viral nationwide.

Carne Asada

The Art of Fire

Thinly sliced skirt steak, marinated in lime, garlic, and smoky chiles, then seared over mesquite flames. Served on hand-pressed tortillas with fresh cilantro and diced onions—a perfect balance of charred edges and juicy tenderness.

Section image
Northern Nights, Global BitesUnder the wide skies of Sonora, weekend afternoons hum with the crackle of mesquite fires. Here, carne asada isn’t just a meal—it’s a social event where families grill citrus-marinated beef over open flames, serving it with warm flour tortillas made by hand. What began as ranch food for vaqueros (cowboys) now stars on menus worldwide, yet remains truest to its roots when shared straight off the grill with a squeeze of lime and a cold cerveza.

Because Every Bite Tells a Story

Just WOW. This food is QUALITY! We found Maiz while attending an event at the winery Jessie's Grove in Lodi. The birria is sooooo good. The huaraches are to die for. Service is so friendly. I love how they show on their signage the regions in Mexico that the types of meat they serve originate from. Highly recommend!!

The hand-pressed tortillas were so incredible. Great service. I got the huaraches, street tacos, and quesadilla. Definitely getting birria next time. Total surprise, as good as it gets!

Excellent street tacos served by Maiz @ Movement Brewing. Carne Asada tacos cooked to perfection. Great way to welcome in the New Year. We'll be back for more.

Man this place is AMAZING!!! My friend and I seek them out when they are at Logoff brewing in Rancho Cordova. Their tacos and salsa and beyond delicious. We get 4, then shake our heads when we order 3 more (why not just admit you need 7 tacos???). So So So good. Asking them to cater our rehearsal dinner, we love them that much.
